JAM POTS 
2 c. butter
1 c. powdered sugar
2 eggs, beaten
2 tbsp. cornstarch
3 1/2 c. flour

Mix all ingredients and roll into small balls; press 1 ball into a mini-tart pan cup, covering sides and bottom.

FILLING:

2 jars Baker's filling

Put 1 teaspoon of thick jam in each tart shell.

TOPPING:

1 c. white sugar
2 eggs, beaten
2 c. coconut

Mix together; spread small amount on top of each tart. Bake 25 minutes at 350 degrees. Cool before removing from pan. Yields 6 dozen.
