MOCK BLINTZES 
16 slices fresh white bread
8 oz. whipped cream cheese
1 stick butter, melted
Cinnamon-sugar mixture

Remove crusts from bread. Flatten bread with rolling pin. Spread cream cheese and roll up. Dip into melted butter - then into cinnamon-sugar. Cut in 2-3 pieces. Warm on a baking sheet 7-10 minutes in a slow oven. Serve warm. Delicious for a coffee. Makes 40-48 blintzes.
