RED BEANS AND RICE 
1 lb. dry kidney beans
1 qt. water
1 ham bone with meat OR
1 lb. kielbasa, sliced
1 lg. onion, chopped
2 cloves garlic, crushed
1/4 c. celery, diced
1/2 tsp. Tabasco sauce
1 tsp. salt
1/4 tsp. thyme
1 bay leaf
Cooked rice

Soak beans overnight in water. Add all ingredients except rice and simmer 3 hours. Remove meat from bone and return to pot. Remove 1 cup beans, mash, return to pot and simmer until thickened. Serve over hot rice.

NOTE: This works very well when done in a crock pot. You can soak and cook in the same utensil. Set the crock pot on low heat and cook all day, no need to thicken with mashed beans.
