EARTHQUAKE COOKIES 
2 c. Cool Whip
1 egg, beaten
1 tsp. vanilla
1 box cake mix, any flavor (but I usually use chocolate)
Nuts
Chocolate chips

Fold Cool Whip, egg and vanilla; add cake mix. Fold in nuts and chocolate chips; stir well. Drop mixture by teaspoon into powdered sugar. Coat lightly. Put on lightly greased baking sheet and bake in preheated oven at 350 degrees for 12-15 minutes.

This is my favorite, most flexible cookie recipe! Experiment with extracts - use peppermint with chocolate, coconut & pineapple with yellow cake, etc. Delicious, soft, always moist!

This is my favorite cookie recipe for ingredients required (easy to keep on hand) versatility ( extracts & cake flavor both), and TASTE! They keep for about 2 weeks in a tightly sealed container and keep that wonderful soft chewy texture.
