LEMON COOKIES 
3 eggs, separated
1 tsp. grated lemon rind
1/2 tsp. lemon extract
1/2 c. confectioners' sugar
1/3 c. flour

Beat egg yolks until thick and lemon colored. Stir in rind and extract. Beat egg whites until stiff but not dry. Gradually add sugar and beat until stiff. Fold in egg yolk mixture. Gently fold in flour. Drop by teaspoonful onto paper lined baking sheet. Bake at 350 degrees for about 12 minutes, until golden brown.
