MINI CHEESECAKES 
26-32 vanilla wafers
1 (8 oz.) pkg. cream cheese, softened
1 can sweetened condensed milk
1/3 c. lemon juice
1 tsp. vanilla
1 can pie filling (I prefer cherry)

Beat cream cheese and sweetened condensed milk until light and fluffy. Stir in lemon juice and vanilla. Place cupcake liners in muffin tins. Place a vanilla wafer in each liner. Top with the cream cheese mixture leaving 1/4" at the top. Chill. When firm, top with pie filling. Serves 26 to 32 cakes.
