PINEAPPLE UPSIDE DOWN CAKE | |
1 cup sugar 1 cup flour 1 tsp. baking powder 1/3 cup pineapple juice 3 eggs, beaten, separated 1 tbsp. butter 1 cup brown sugar 1 small can grated pineapple Beat egg whites. Set aside. Beat yolks with juice and sugar until thick and lemon color. Beat in flour and baking powder. Fold in beaten egg whites last. Cook butter, brown sugar and pineapple until sugar dissolves. Put this mixture in 10 inch cake pan. Pour batter on top of this. Bake 45 minutes at 350°F. Use water and vanilla if you don't have pineapple juice. Turn upside down and cool when done. |
