JUST ABOUT FRENCH BREAD | |
Just about 6 c. flour Just about 2 tbsp. dry yeast Just about 2 tbsp. sugar Just about 1 tbsp. salt Just about 2 c. warm water Sprinkle of cornmeal In a large mixing bowl, combine 2 cups flour, yeast, sugar, salt and water. Beat at medium speed for just about 2 minutes. By hand stir in rest of flour, forming a stiff dough. Knead on floured surface until smooth and elastic, just about 8 minutes. Place in greased bowl, greasing top also. Let rise in warm place until light and just about doubled in size. Just about 1 1/2 hours. Punch down dough and form into loaves. Place on baking sheet sprinkled with cornmeal. Let rise until just about doubled in size, just about 45 minutes. Place shallow pan of water on lower rack in 400 degree preheated oven and bread on upper rack. Bake just about 25-30 minutes. Cool. Eat and enjoy! |
