MANECOTTI 
1 lb. ground meat
1/2 c. chopped onions
1/4 c. butter
1/2 tsp. Spice Island Italian herbs
1 tbsp. shredded parsley
1/2 tsp. salt
1 c. dry cottage cheese
1/2 c. Parmesan cheese
2 egg yolks
8 or 10 manecotti

BASIL TOMATO SAUCE:

Boiling salted water
1/2 lb. Monterey Jack cheese
2 tbsp. butter
1/2 c. chopped onions
2 (8 oz.) cans tomato sauce
2 tsp. Spice Island Beau Monde seasoning
2 tsp. shredded parsley
1/2 tsp. sweet basil

Start tomato sauce cooking first. Saute onions in butter; add meat. Cook until brown. Drain off any excess fat. Add herbs, parsley, and salt. Mix cottage cheese and Parmesan cheese with egg yolks. Add to meat mixture; remove from heat. Cook Manecotti in boiling salt water according to directions. In bottom of large baking dish, pour about 1 cup of basil tomato sauce. Stuff manecotti with meat mixture and place in baking dish. Cover with remaining sauce, then with Monterey Jack cheese. Bake at 325 degrees for 25 minutes Saute onions in butter. Add remaining ingredients. Simmer gently 20 minutes.
