POTATO HAM SCALLOP 
2 c. cubed fully cooked ham
8 med. potatoes, peeled and thinly sliced (6 c.)
1/4 c. onion, finely chopped
1/3 c. flour
2 c. 2% milk
3 tbsp. fine dry bread crumbs
1 tbsp. butter
2 tbsp. parsley

Place 1/2 of the ham in a 2 quart casserole. Cover with 1/2 of the potatoes and 1/2 of the onions. Sift 1/2 of the flour over this; season with salt and pepper. Repeat layers. Season with additional salt and pepper. Sift remaining flour. Pour milk over all.

Bake, covered, at 350 degrees until potatoes are nearly tender - 1 to 1 1/4 hours. Uncover. Combine bread crumbs and melted butter. Sprinkle atop casserole. Top with parsley. Bake 15 minutes longer.

Serve with a vegetable and a salad. Serves 6.
