LEMON ZUCCHINI BREAD 
3 beaten eggs
2 c. white sugar
2 tsp. lemon extract
1 1/2 tsp. vanilla extract
1 c. oil
3 c. grated zucchini
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/4 tsp. baking powder

Mix together eggs, sugar, extracts, oil, and zucchini. Add flour gradually with salt, soda, cinnamon, and baking powder already folded into flour. When completely mixed together, bake at 350 degrees for 1 hour. Makes 2 loaves.

This is an excellent and easy recipe. Even those that don't like zucchini fall in love with this bread. Kids too!
