SUMMERTIME GAZPACHO | |
4 c. tomato juice 1/2 c. finely chopped unpeeled cucumber 1/2 c. chopped tomato 1/4 c. finely chopped green pepper 1/4 c. finely chopped onion 1/4 c. finely chopped celery 1 garlic clove, crushed 1/4 c. diced pimento 2 tbsp. olive oil 2 tbsp. wine vinegar 1/2 tsp. salt 1/4 tsp. pepper Combine all ingredients. Stir well. Cover and chill at least 3 hours. Stir before serving. Excellent for diets! Makes 5 1/2 cups. |
