SUMMERTIME FRUIT BREAD 
1 (8 oz.) softened cream cheese
1 c. butter, softened or butter
1 1/2 c. sugar
1 1/2 tsp. vanilla extract
4 eggs
2 1/4 c. all-purpose flour
1 1/2 tsp. baking powder
1 (17 oz.) can fruit cocktail, drained
1/2 c. chopped nuts

Line 2 (9"x5"x3") loaf pans with aluminum foil, leaving 1/2" collar around edges; grease bottom and sides. Combine cream cheese, butter, sugar and vanilla; add eggs, one at a time, beating well after each addition. Gradually add flour and baking powder; fold in fruit and nuts. Spoon batter into prepared pans. Bake at 325 degrees for 1 hour or until tests done with a toothpick. Cool in pans 5 to 10 minutes; remove from pans and cool thoroughly. Yield: 2 loaves.
