RED VELVET CAKE 
2 1/2 c. flour
3 tbsp. Nestle's Quik
1 1/2 c. sugar
1/2 c. shortening
1/2 tsp. salt
2 eggs
2 oz. red food coloring
1 tsp. vanilla
1 tsp. almond flavoring
1 c. buttermilk
1 tsp. white vinegar
1 tsp. baking soda

Cream sugar and shortening. Add eggs. Add coloring, vanilla and vinegar. Sift flour, salt and Quik together. Combine soda and buttermilk and add to creamed mixture alternately with flour. Bake in 2 layers at 350 degrees for 30 minutes.

CREAM CHEESE ICING:

1 (3 oz.) pkg. cream cheese
1/4 c. milk
2 1/2 c. sifted confectioners' sugar
1 tsp. vanilla

Soften cheese and mix with milk until smooth. Add confectioners' sugar and vanilla. Beat until fluffy.
