12 eggs 3 lbs. Ricotta, divided 1/2 tsp. salt 1 1/2 c. flour 1 lb. Mozzarella, sliced 1/2 lb. dry sausage, salami, prosciutto, pepperoni, etc. (any one sliced thin) 3 tbsp. sugar Blend eggs with electric mixer. Add about 1/2 pound Ricotta, salt, sugar and flour; mix well. Spread half this batter (looks like pancake batter) on greased 9x12 roasting pan or (2) pie pans. Add sliced Mozzarella, remaining Ricotta and "meat", spreading evenly over dough mixture. Top with remaining batter. Bake at 350 degrees for about 40 minutes. |
