EASY TO ROLL SUGAR COOKIES 
1 c. butter
1 1/2 c. confectioners' sugar
1 egg
2 1/2 c. sifted flour
1 tsp. vanilla
1 tsp. baking soda
1 tsp. cream of tartar
1/2 tsp. salt

Sift dry ingredients together. Cream butter. Add sugar and 1 beaten egg and add vanilla. Slowly add flour mixture to butter and sugar mixture. Chill a minimum of 2 hours. Roll out on floured surface to 1/8 inch thick. Bake at 350 degrees on an ungreased cookie sheet until lightly golden.
