3 zucchini, sliced 1 bunch green onions, chopped 1 c. celery, chopped, include leaves 1/4 c. parsley, chopped 3 tbsp. fresh basil, chopped OR 1 tsp. dried basil 1 clove garlic, minced 2 potatoes, peeled and diced 3 c. water 6 chicken bouillon cubes Salt and pepper to taste Seasoning salt or paprika for garnish Place in large soup pot the zucchini, onions, celery leaves, parsley, basil, garlic, potatoes, water, bouillon cubes, salt, and dash pepper. Cover and simmer 15-20 minutes or until vegetables are very tender. Let cool slightly and puree in blender until smooth. Season with salt and pepper to taste. Reheat before serving and sprinkle with seasoning salt or paprika. Makes 6 servings. Contains 40 calories per serving. |
