CRISS CROSS COOKIES 
4 c. sifted flour
1 1/2 tsp. baking soda
2 tsp. cream of tartar
1 tsp. salt
1 1/3 c. vegetable shortening
2 1/2 c. light brown sugar, packed
1 1/2 tsp. vanilla
1 tsp. lemon extract
3 eggs

Sift flour with soda, cream of tartar and salt. Cream shortening. Add sugar gradually then vanilla, lemon flavoring and eggs. Beat until light and fluffy. Add flour; mix until smooth, then chill for several hours.

Roll level tablespoon of dough into ball. Place on cookie sheet. Press lightly with tines of fork to make criss-cross pattern. Bake at 350 degrees for 8-10 minutes. Yields 8 dozen.
