RAISIN CRISS-CROSS COOKIES 
1/2 c. shortening
1/2 to 3/4 c. sugar
1 egg
1/2 tsp. lemon extract
1 3/4 c. flour
3/4 tsp. cream of tartar
3/4 tsp. baking soda
1/4 tsp. salt
1 c. raisins

Mix shortening, sugar, egg and extract together. Then add dry ingredients. Put raisins in 1 cup water and simmer 10 minutes or so. (This keeps the raisins from drying out when baked.) Drain, then add to cookie dough. Roll into 1 inch balls. Place on ungreased cookie sheet. Flatten with fork dipped in flour making criss-cross pattern. Bake at 350 degrees for 8 to 10 minutes. Makes approximately 3 dozen cookies.
