COLD OVEN POUND CAKE | |
3 sticks butter 3 c. sugar 5 eggs (or egg beaters or scramblers) 5 eggs 3 c. flour 1 tsp. baking powder 1 c. milk (can use 2% or skim) 1 tsp. vanilla 1 tbsp. lemon juice or 1 tsp. almond extract Cream butter and sugar. Add eggs and beat well. Go by regular cake mixing method to finish. Pour in a large tube pan or bundt pan which has been sprayed with Pam. Place in COLD OVEN. Set oven to 325 degrees and turn on. After 20 minutes reduce heat to 325 degrees and bake approximately 40 minutes or until done, depending on your oven. Remove from pan; cool and serve. (My husband is waiting for the first hot slice with butter on it.) This is a good cake for people on low cholesterol and salt restricted diets. Now, if you would like chocolate, add 3 or 4 tbsp. cocoa to your flour (depending on how chocolaty you like) and 1/2 tsp. salt. |
