IRISH POTATO CAKES 
1 1/2 c. firm packed mashed potato
1 egg yolk
1 tsp. butter
1 tbsp. parsley or chives
Salt & pepper
Aerosol non-stick cooking spray

1. Preheat sandwich toaster.

2. Combine all ingredients except non-stick spray.

3. Spray each scallop with the non-stick spray.

4. Distribute the potato mixture evenly into the 4 scallop molds.

5. Lower the lid and cook for 5 to 7 minutes. "Great with grilled steak and a French salad."

VARIATIONS: You may add any of the following: 1/2 cup grated cheese, 2 rashers of bacon, cooked and chopped, mashed leftover pumpkin, etc.
