IRISH POTATO CAKE 
1 c. mashed potatoes
2 sticks butter
2 c. sugar
4 eggs
2 c. flour
1 tsp. cinnamon
1 tsp. cloves
1 tsp. nutmeg
1 tsp. vanilla flavoring
1 1/2 c. chopped nuts
1 c. raisins

If using plain flour, 2 teaspoons baking powder.

Cook potatoes and mash. Melt butter in hot potatoes. Add sugar and eggs and beat until smooth. Add flour and spices. Mix well (if mixture becomes thick add milk, a tablespoon at a time). Add nuts and raisins. Pour mixture in two well greased cake pans. Bake in a 350 degree oven for 30 minutes.

ICING:

2 c. confectioners' sugar
2 or 3 tbsp. cocoa
1 stick butter

Add evaporated milk to make spreading consistency.
