IRISH POTATO CAKE 
2 1/2 c. sugar
4 eggs
1/2 c. shortening (Crisco)
2 sm. boxes dates, cut in sm. pieces (I use one box)
1 c. sweet milk
2 c. raisins
1 c. mashed Irish potatoes (cook to mash, no seasonings)
1 c. cocoa
2 c. pecans
1 c. coconut
3 tsp. baking powder
Spices
Nutmeg
Vanilla

M ix all together. You can add 1 teaspoon pumpkin spice mix or 1 teaspoon apple spice mix, that way you've got all your spices. If this recipe is too big, cut it in half. Bake in 350 degree oven. You can bake it in layers or in a tube pan, or a big loaf pan.

DATE FILLING:

1 (8 oz.) pkg. pitted dates, finely chopped
1/4 c. sugar
1/8 tsp. salt
1/3 c. water
1/4 c. chopped pecans

Combine dates, sugar, salt and water; cook over low heat 5 minutes. Remove from heat; add nuts. Cool slightly. Yield: about 1 1/2 cups. (You can use this on your potato cake or your fruit cake; double the recipe if you like to have more.)
