POLYNESIAN CAKE 
1 c. oil
2 c. flour
3 eggs
2 c. sugar
2 tsp. baking soda
2 tsp. vanilla
2 jars junior baby carrots
1 c. coconut
2 tsp. cinnamon
1 sm. can crushed pineapple

Combine all ingredients in a bowl, mixing with a spoon. Bake in 9 x 13 x 2 inch pan, greased and lined with wax paper, at 350 degrees for 50 minutes.
