MILKLESS PANCAKES FROM SCRATCH 
2 c. flour
4 tsp baking powder
3 large eggs
2 Tbsp. olive oil
2 Tbsp. sugar
1/2 tsp. salt
2 c. water
1 tsp. vanilla extract

This is a milk free version of pancakes from scratch. Easy and good yield of about 20 pancakes of about 4" diameter - perfect for our hungry family of four.

Put dry ingredients in a large mixing bowl.

Crack eggs into small bowl and beat till bubbles start to form. Stir in vanilla extract and oil.

Combine egg, oil and vanilla with dry ingredients and water and mix thoroughly to avoid lumps.

Scoop batter into medium-heat skillet in 1/3 cupfuls. Flip when bubbles form and edges begin to dry. Do not press down after flipping - this prevents rising of the pancake batter during cooking.

Like others, I did about half the water and added more sugar. I also put all of the liquids together in a bowl and beat them till my arm hurt. Super bubbly. Then I folded it into the dry ingredients and did not over mix. They came out sooooo fluffy and amazing!

Just made this recipe and FABULOUS. I added only 1.5 cups of water, canola oil instead of olive, 2.5 tbsp of sugar and my pancake batter came out thick and smooth. Once cooked my pancakes were fluffy! My kiddos love them!

I make pancakes from scratch a lot, but this is the first time using this recipe since I ran out of milk last night and did not want to run to the store. I have to say I was not impressed. I followed the recipe, but like most others used 1.5 cups water, my pancakes look like crepes; there is absolutely no fluffiness to them at all, they are paper flat and the taste is lacking. After taking the first two off the griddle I added another cup or so of flour, more sugar and vanilla. They are a bit more fluffy, but not what my normal pancakes look like.

I thought it was okay. Taste is there but it lacks the fluffiness that you'd expect from pancakes. It tasted grainy. My family said not to make it again.

Amazing! I needed a recipe that didn't require milk and thus fit the need perfectly! Thin but spongey! :-) Next time I'll skink the amount of water to make it a tad thicker. Thanks for posting recipe!!!!!!!!

I used 2 eggs instead of three and half a cup of my liquid was soymilk. These turned out very fluffy with great texture and flavor. I added the water to the other wet ingredients before adding to the dry. Make sure you don't overbeat once everything is combined!

This is my go to recipe. I've used it several times. Always light and fluffy. My kids go crazy over them.

Today I added a bit of cinnamon and a small banana for an added change. A big hit :)

I made them, A for ease of effort, B for recipe (I adjusted the sugar and flour quotas, but to be fair I used whole wheat flour). It gets another A for yield, my girlfriend took about 7 to class and I had another batch of 7 with more batter still. I'd estimate 20 in total. Where it fell down, and again perhaps my wheat flour contributed, but the taste was quite low key. I made some ice-cream that I'll use it with but definitely not stand alone. Overall useful and fair 3/5

I like this recipe, but I added an extra cup of flour which made it really fluffy :) I also added another half teaspoon of salt and another 1/4 cup of almond milk.
