MILKLESS PANCAKES FROM SCRATCH 
2 c. flour
4 tsp baking powder
3 large eggs
2 Tbsp. olive oil
2 Tbsp. sugar
1/2 tsp. salt
2 c. water
1 tsp. vanilla extract

This is a milk free version of pancakes from scratch. Easy and good yield of about 20 pancakes of about 4" diameter - perfect for our hungry family of four.

Put dry ingredients in a large mixing bowl.

Crack eggs into small bowl and beat till bubbles start to form. Stir in vanilla extract and oil.

Combine egg, oil and vanilla with dry ingredients and water and mix thoroughly to avoid lumps.

Scoop batter into medium-heat skillet in 1/3 cupfuls. Flip when bubbles form and edges begin to dry. Do not press down after flipping - this prevents rising of the pancake batter during cooking.

This was an amazing recipe since I had no milk and tasted exactly the same as my usual ones with milk! I had also ran out of vanilla extract so I used 6 tablespoons of sugar.

Thank you for this recipe! I read some of the suggestions before hand and adjusted the sugar to 3 tbsp., vanilla to 1 1/2 tsp., substituted the olive oil for 3 tbsp. of melted butter and only added 1 1/2 cups of water to start because I didn't want a crepe-effect and then gradually added more water as needed. I mixed the combined ingredients until it was very smooth and all the lumps were gone. The end result was a very fluffy and delicious pancake. This one is a keeper, especially when you've run out of milk!

Delicious! Was looking for a recipe using the ingredients we had on hand upon arriving at our summer home. Made my own baking powder with cream tartar & baking soda. Added fresh blueberries. Fried with coconut oil. My husband said they are the best pancakes he's ever had.

I made these for my 8 month old so omitted the sugar, salt & vanilla. I halved the recipe, just using 1 egg, and instead of 1 cup water I grated an apple very finely and just added enough water to it to make up 1 cup worth. I also put in some cinnamon. They came out beautifully fluffy and my son loved them! I ate a couple with some butter & brown sugar sprinkled on top & thought they were pretty good :)

These were great! Mine didn't come out flat at all... they were incredibly thick and fluffy, but I will say they were more dense than some other recipes I've tried. The only change I made to the recipe was that I added the water at the very end and only added enough to get it to a good consistency, so about 1.5 cups instead of 2 cups.

I made them for a second time and added about a tablespoon of sour cream since I enjoy the tangy aspect of a buttermilk pancake... they were even better! Definitely a keeper for a mom like me with kids who can't handle a lot of dairy!

I tried it, and it was awesome.
I think I like it better than my usual recipe!
The only thing I did differently was that I used coconut oil rather than olive as my olive oil has a pretty strong taste, and I used about half a cup less water than the recipe called for.
Throwing a little coconut oil in the pan before each 'cake also made for a nice crispy flapjack.
THANKS FOR THIS RECIPE! I didn't have to go to store this morning for milk. WINNING.

These came out really fluffy, however I should have added a little more sugar or vanilla since they were a bit bland. Definitely a good recipe if you dont have milk which is why I chose to use this one

These are really quite excellent if you follow some important universal pancake making rules/guidelines. I am very pleased with this recipe... Our ten year old son is the one who found this recipe online and has now successfully made these pancakes on two occasions with his spend the night buddies. We use first cold pressed unrefined coconut oil today & kerrygold grass fed butter two weekends ago. Both lend an awesome & healthier option than canola/veggie oil ir even olive oil for that matter. Heating olive oil to hot temps is actually quite harmful to your health so we only use olive oil at room temperature. I would definitely encourage you to read up about how harmful heating olive oil can be. Also, I was just discussing with our 10-year-old son that I do think this recipe would be just as good made with only two eggs instead of three eggs. Next time we have a slumber party we have decided to try adding just a smidgen more vanilla extract along with a little bit of Almond extract, shredded coconut flakes, and chocolate chips! So excited to see our son taking charge in the kitchen! I literally did not lift a finger during his two pancake making efforts!

This recipe was really good! However I didn't follow it to a tee. Instead of 2 cups water I put 1 cup water and 1 cup coffee, it was amazing! I also put all of the ingredients into a bowl except the eggs, I then separated the yolks from the whites, placed the whites in a smaller bowl and beat them with our hand beater until they got quite stiff. Although the batter was a little runny the pancakes turned out fluffy and light! So good!
