MILKLESS PANCAKES FROM SCRATCH 
2 c. flour
4 tsp baking powder
3 large eggs
2 Tbsp. olive oil
2 Tbsp. sugar
1/2 tsp. salt
2 c. water
1 tsp. vanilla extract

This is a milk free version of pancakes from scratch. Easy and good yield of about 20 pancakes of about 4" diameter - perfect for our hungry family of four.

Put dry ingredients in a large mixing bowl.

Crack eggs into small bowl and beat till bubbles start to form. Stir in vanilla extract and oil.

Combine egg, oil and vanilla with dry ingredients and water and mix thoroughly to avoid lumps.

Scoop batter into medium-heat skillet in 1/3 cupfuls. Flip when bubbles form and edges begin to dry. Do not press down after flipping - this prevents rising of the pancake batter during cooking.

i like this recipe. The only thing I changed is I didn't use 2 cups of water. That would had been way too much water and would have made them super thin.

Great recipe! Halved it for one person but kept 1 tsp vanilla. Definitely use an electric beater to get them fluffy.

I made these pancakes twice in two weeks. I am very pleased with the results. I did put an extra touch of flour but next time I would put less wáter. I left the mixture to rest a bit. The pancakes were always fluffy. Thanks for sharing.

Gave a bit of egg taste. Add a tad brown sugar to cover it up. And add a bit of extra flour to make them thicker. Otherwise this is one of the best milk free pancakes recipes I've ever made.

If you add four more tablespoons of sugar and a little bit of hot cocoa plus 2 cups of cornmeal it will taste really wonderful. It will also feed a family of 6.

Only use 1.5 cups of water which was plenty and another tsp of vanilla essence plus an extra two tablespoons of castor sugar. I put a dash of cinnamon into the flour mixture as well and it tasted great. Not the fluffiest pancakes but they were good without milk.

Made EXACTLY as shown except for one so quartered everything!! PERFECT! Best I ever tasted as I thinks pancakes are too heavy! Cooked in splash of Veg oil- topped with butter & diet maple syrup! Only question ? Why the hell do

I made them for just me so I divided the recipe by 3.
I wanted to see if it could work in one bowl so I did the following and they turned out awesome. Plus this is the first time that I have ever made pancakes and was able to keep them in one piece. I have a terrible pancake making history, lol! Not this time however.
We also don't have baking powder so I had to use baking soda and vinegar.
Anyway, I beat the sugar, egg, and vanilla together first. Then I added the olive oil, stirred a bit, then I added a little over a teaspoon of vinegar and stirred together. Then I added the water and stirred together well.
Then I added the flour and stirred together until very few lumps were present.
Oops, I forgot the salt!
Haha, no problem- I added about half a teaspoon- maybe a little over as I like to ensure that I have enough.
Then I stirred together lightly.
Ok, final steps- I fired up the non-stick skillet and put in about a tablespoon of butter and melted it, swirled it to grease the pan, meanwhile I placed about 1/2- maybe a little over a 1/2 teaspoon of baking soda in the mixture.
I had to turn the heat off of the pan, and stirred up the baking soda into yhe.mixture.
Ok, then I turned the heat back on and started pouring 1/3 cups of the mix at t time into the pan.
That was the perfect size of pancake.
I got about 4 1/2 decent sized pancakes and they turned out nice and fluffy.
They tasted great although I did accidentally slightly burn the first one.
I got a really nice feel for it after the first two.
It worked well!
I have really cheap generic pancake syrup, but it still tasted great.
