SAUSAGE AND PEPPERS | |
1 lb. fresh sausage (mild or hot or mixed) 1/2 c. water 1 med. onion 2 bell peppers 1 tbsp. minced garlic 1 can crushed tomatoes 1 tsp. Italian seasoning 1/2 tsp. salt Cut sausage into bite-size pieces. Put in large skillet with water and bring to a boil. Cover, reduce heat and simmer 4 to 5 minutes, stirring once until sausage is no longer pink. Strain off fat and water. Peel onion and cut onion and peppers into bite-size pieces. Add vegetables to skillet with garlic, tomatoes and seasonings. Bring to boil and simmer 8-9 minutes, stirring until vegetables are tender. |
