SAUSAGES AND PEPPERS-TOMATO
SAUCE
 
2 lbs. sweet Italian sausages
2 cloves garlic
2 green bell peppers
1 lg. onion
3/4 c. olive oil
2 lb. can plum tomatoes
1 tbsp. lite salt
1 tsp. parsley
1 tsp. oregano
1/2 tsp. hot pepper
2 lg. frying pans

Put 1/4 cup oil in one pan and brown sausages.

In second pan, put 1/2 cup olive oil; heat well.

Put sliced peppers and garlic in hot oil and saute on medium flame with over for 10-15 minutes; add onions and saute another 5 minutes. Keep turning and stirring to prevent burning.

Put tomatoes in blender and blend. Add to peppers, garlic and onions slowly and carefully, not to splash back in your face. Add seasonings and salt as written above. Bring to boil; lower flame. Add sausages and cover (leave cover slightly off) and cook for about 1/2 hour. Boil water for spaghetti or macaroni and everything will be ready at the same time. Delicious!
