SAUSAGE AND PEPPERS | |
1 lb. hot Italian sausage links 1 lg. onion, sliced 1 sweet red pepper, sliced in 1/4" strips 1 green pepper, sliced in 1/4" strips 1 (16 oz.) can tomatoes 2 tbsp. olive oil 1 tsp. Italian seasoning Salt & pepper to taste In large frying pan, saute onion, red and green peppers in olive oil until tender. Remove from pan and keep warm. Cut Italian sausage into 1" pieces. Brown in pan. Drain off fat. Return onions and peppers to pan. Chop tomatoes using blender. Pour over sausage, onions and peppers. Season with salt and pepper and Italian seasoning. Cover and cook over medium heat for 20 minutes or until flavors are blended. Serve over rice. 4 servings. |
