SAUSAGE AND PEPPERS 
1 lb. sweet or hot Italian sausage or combination of the two
1/2 c. water
2 bell peppers
1 (28 oz.) can crushed tomatoes
1/2 tsp. salt
1 med. onion
1 tbsp. minced garlic
1 tsp. Italian seasoning

Cut sausage in bite-size pieces. Put into a large skillet with the water and bring to a boil. Cover, reduce heat and simmer 4 to 5 minutes, stirring once until the sausages are no longer pink. Remove skillet from heat. Strain off water and sausage fat. Meanwhile, peel onion half, core and seed peppers. Cut onions and pepper in bite size chunks. Add vegetables to skillet with garlic, tomatoes, Italian seasoning, and salt and bring to a boil. Cover, reduce heat and simmer 8 to 9 minutes, stirring occasionally until vegetables are tender. Makes 4 servings. Serve with hot crusty Italian bread.
