SAUSAGE, TOMATOES AND PEPPERS | |
1 lb. mild or hot pork sausage links, cut into 1 inch pieces 3 tbsp. vegetable oil 2 lg. onions, peeled and chopped 2 lg. green peppers, cored, seeded and cut into 1/2 inch strips 3 med.-size tomatoes, peeled and chopped 1/4 tsp. salt (Or one 1 pound can tomatoes, drained and chopped). 1. Cook sausages in a heavy 12 inch skillet, uncovered, over moderate heat for 10 minutes, or until browned. Remove the sausages to a platter and set aside. Pour off and discard drippings. 2. Heat oil in skillet over moderate heat, add onions, cover and cook for 5 minutes, stirring occasionally, until soft. 3. Add peppers, tomatoes and salt. Return the sausages to the pan, cover and cook for 10 minutes. Tilt skillet and spoon fat from the sauce. Serve hot with pasta, crusty bread and green salad. |
