WALNUT SQUASH BREAD 
1 1/2 c. flour
2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1 c. chopped walnuts
2 eggs
2/3 c. oil
2 tsp. vanilla extract
1 1/2 c. grated acorn squash

Combine the flour, cinnamon, baking powder, baking soda and salt. Set the mixture aside. Beat the eggs until they're frothy, add the sugar, oil and vanilla extract; beat 3 minutes. Stir in the grated squash. Add the dry ingredients and walnuts and mix just until dry ingredients are moistened. Pour the mixture into a greased 8 1/2 x 4 1/2 inch loaf pan. Bake at 350 degrees for 40 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes before removing it from the pan. Cool on a rack.
