SWEET POTATO BREAD | |
1 c. oil 2 c. mashed sweet potatoes 4 eggs, beaten 3 c. sugar 2/3 c. water 1 1/2 tsp. salt 3 1/2 c. flour 2 tsp. baking soda 1 tsp. nutmeg 2 tsp. cinnamon 1/2 c. chopped nuts Stir all ingredients together, adding flour and nuts last. Grease and flour 4 loaf pans to 2 inches from the top (about 2 and 3/4 cups of mixture per pan). Bake at 350 degrees for 45 minutes to 1 hour. If using canned sweet potatoes, use 16 ounce can. Drain 3/4 of the juice off before mashing potatoes. |
