ZUCCHINI & TOMATO AU GRATIN 
(May use 2 cans of canned zucchini & tomato) or the following:

2 lbs. zucchini, cut in 1/4" pieces
3 tbsp. chopped onion
3 tbsp. bacon grease
2 c. canned stewed tomatoes
1/2 tsp. salt
1/8 tsp. pepper
1 c. grated mild Cheddar cheese

Cook onions in bacon grease; add zucchini. Cook slowly 5 minutes, stirring frequently. Add tomatoes, salt, pepper. Cover; cook 5 minutes. Put in greased 1 1/2 quart baking dish. Sprinkle cheese over top. Bake at 350 degrees for 20 minutes.

If you use canned zucchini, just sprinkle cheese over; bake to heat zucchini and melt the cheese.
