16 ripe tomatoes 3 green peppers, halved, seeded 3 sweet red peppers, halved, seeded 1 cucumber 7 c. chopped celery 3 c. chopped onion 2/3 c. salt 6 c. cider vinegar 6 c. brown sugar 1 tbsp. mustard seeds 1 tsp. BLAIR fine herb seasoning 1 tsp. BLAIR lemon pepper Chop tomatoes, peppers, cucumber very fine and combine with celery and onion in large bowl. Sprinkle with salt. Allow to stand 12 hours or overnight. Drain and discard liquid. Combine vegetables with remaining ingredients in a heavy kettle. Heat to boiling. Simmer slowly, stirring several times until thick (about 30 minutes). Spoon into hot sterilized jars and seal. Delicious on hamburgers, hot dogs or cooked beans. |
