YAM MUFFINS 
1 1/2 c. self-rising flour
1/2 c. sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. milk
1/2 c. mashed, cooked yams
1/4 c. melted butter
1 egg
1/2 c. chopped nuts

Mix just until all flour is moistened. Batter should be lumpy. Fill muffin cups 2/3 full. Sprinkle 1/4 teaspoon sugar over each cup. Bake at 400 degrees for 18 to 20 minutes.
