MUFFINS 
1 1/2 c. self-rising flour
1/2 c. sugar
1 egg slightly beaten
1/2 c. milk
1/4 c. vegetable oil

Combine flour and sugar in a large bowl. Add egg, milk and oil. Stir just until ingredients are moistened. Spray muffin pan with Pam. Spoon mixture into prepared muffin pans, filling 2/3 full.

Bake at 400°F for 20-25 minutes. Remove from pans immediately. Serve hot. The flavor may be changed by adding either of the following: raisins 1/2 c. and 1 tsp. cinnamon. Chocolate chip 1/2 c. Jelly- grape, strawberry. After placing muffin mixture in muffin pan add 1 tsp. jelly into center of mixture.

Makes 6 large or 10 small muffins.
