CHEESY BAKED COD 
2 lbs. cod fillets
Salt & pepper to taste
1/2 to 3/4 c. sour cream
1/2 c. chopped onion
1 to 2 tsp. mustard (prepared)
1/2 c. grated Swiss or cheddar

Preheat oven to 400 degrees. Rinse and dry fish well. Salt and pepper to taste. Layer fish in 11 x 7 inch baking dish. Mix remaining ingredients and cover fish. Bake at 400 degrees until slightly browned and fish are flaky, approximately 10 minutes per inch of thickness. Serves 4 to 6.
