FISH FILLET BURGER 
2 tilapia fillets, cut in half to become bun sized (or your favorite white fish)
2 eggs, beaten
1/2 cup all-purpose flour
1/2 cup breadcrumbs
1 tsp. salt
1/2 tsp. pepper
1 tsp. garlic powder
non-stick cooking spray (Pam)
4 hamburger buns
4 slices American cheese (or your favorite)
shredded lettuce

Prepare homemade tartar sauce (see below) and set aside in refrigerator to chill.

Line a baking sheet with foil and place in the oven.

Preheat oven and baking sheet to 350°F for 30 minutes.

Mix flour, breadcrumbs, salt, pepper and garlic powder in a shallow dish (like a pie plate). Beat in the eggs in a bowl. Dip the tilapia in the egg and allow extra to drip off.

Place in the flour mixture and coat completely, shaking off the extra. Place on a plate. Repeat with the remaining fish.

Spray tops of fish with non-stick cooking spray. Place on the baking sheet cooking spray side down. Spray the other side of fish with the cooking spray as well.

Bake at 350°F for 15 minutes and then flip and cook an additional 15 minutes or until the fish is completely cooked and golden brown.

Toast the buns and melt a slice of cheese on each bottom bun to melt.

Place a piece of tilapia on top of the cheese and then top with a spoonful of tartar sauce.

Top with lettuce and cucumber and the bun.

HOMEMADE TARTAR SAUCE:

1/2 cup mayonnaise
1/2 cup Greek yogurt (I use non-fat)
1 tbsp. white vinegar
1/2 cup bread and butter pickles relish
2 tbsp. bread and butter relish liquid
salt and pepper, to taste

Mix all ingredients in a bowl and set aside in refrigerator.

Serves 4.
