ARTICHOKE RICE SALAD 
1 (14 oz.) pkg. Minute Rice (make 6 c.)
5 pkg. (or cubes) of chicken broth
4 green onions, sliced
1 green pepper, chopped
8 or more black olives, sliced
2 (6 oz.) jars marinated artichoke hearts
1/3 c. mayonnaise

Cook rice (in chicken broth) omit butter. Cool to room temperature. Add onions, peppers, black olives. Drain liquid from artichokes and add to mayonnaise. Mix well.

Add mayonnaise mixture to rice. Slice artichokes and add to rice mixture. Refrigerate well. (Can be molded.)
