ARTICHOKE-RICE SALAD 
6 oz. pkg. chicken flavored rice
Vermicelli mix
2 (7 oz.) jars marinated artichoke hearts
1/3 c. mayonnaise
1/4 tsp. curry powder
12 green olives, sliced
1/2 green pepper, sliced or chopped
2 green onions, chopped

Cook rice according to directions, omitting the butter. Cool. Drain artichokes, reserving the liquid.

Combine the liquid, mayonnaise and curry powder. Blend well. Combine all ingredients. Mix well and chill.
