Boil any inexpensive cut of lamb 1 hour. Remove from heat. Clean off bones making sure to remove all the fat.
Combine the following: 1/2 c. cooked lentils or 1 c. peas 1 med. onion, chopped 1 carrot, chopped fine 1 rib celery, chopped fine 2 1/2 c. string chicken broth or 1 can cream of chicken soup with 1 can of water or 1 can of cream of mushroom soup with the 1 can of water
Add the cooked lamb. Cook in a covered microwavable dish on high for 5 to 8 minutes (times may vary according to the microwave), stirring frequently. Easily serves four.
