CHICKEN RICE SALAD 
1 c. chicken broth, add enough water to make 2 1/2 c.
1 c. rice, cooked in water

1/2 c. vegetable oil
2 tbsp. soy sauce
1/2 tsp. salt

Stir all the above into rice after it is cooled. Cover and chill.

2 c. chicken, cooked and diced
1/4 lb. or less fresh bean sprouts
1/4 lb. fresh mushrooms, sliced
4 green onions with tops, chopped
2 oz. jar pimiento, drained and chopped

Toss.
