STRAWBERRY ICE 
2 c. fresh strawberries
1/4 c. sugar
1/2 c. water
2 tbsp. unsweetened orange juice
2 egg whites
1/4 tsp. cream of tartar
Pinch of salt

Combine first 4 ingredients in container of an electric blender; process until smooth. Pour mixture into a medium saucepan, and cook over low heat 5 minutes, stirring occasionally. Let cool, and pour into a medium mixing bowl; freeze 45 minutes or until slushy.

Combine egg whites (at room temperature), cream of tartar, and salt in mixing bowl; beat until soft peaks form.

Beat strawberry mixture until fluffy and smooth. Fold in egg whites. Freeze until firm. Yield: 6 servings; about 57 calories per serving.
