LISA'S DYNAMITE SALSA | |
1 (28 oz.) can diced tomatoes* (or fresh) 1 medium onion, diced 1 (4 oz.) can chopped black olives 1 tsp. salt 1 tsp. crushed red pepper 1 tsp. basil 1 tsp. oregano 1/4 tsp. cumin 1 tbsp. red wine vinegar 1 bunch chopped cilantro 4 cloves garlic Note: To make this even better substitute diced tomatoes with cans of “Rotel original” with green chilies. Mix all of the ingredients in a bowl, cover tightly and place in the refrigerator. This is best if prepared at least two to four days ahead of serving as it gets much tastier and “warmer” with age. The longer it sits, the better it gets! Serving Suggestion: For an “adult” treat, pour 4 ounces of tomato or other juice such as V8 (low sodium) into a blender, add 4 ounces of Dynamite salsa and puree into a smooth consistency. Pour over ice and add a dash of lemon juice, a dash of Worcestershire sauce and two ounces of your favorite vodka, stir and serve. Garnish with whatever you’d like. Submitted by: Lisa R. |
