PINEAPPLE CREAM CHEESE CAKE 
2 eggs
2 c. sugar
1 tsp. vanilla
1 (1 lb. 13 oz.) can crushed pineapple, including juice (packed in its own juice, unsweetened)
2 c. flour
2 tsp. baking soda
1 c. chopped nuts

FROSTING:

1 (8 oz.) pkg. cream cheese
1 tsp. vanilla
1/2 c. butter
1 1/2 c. powdered sugar

Beat together the eggs, sugar and vanilla, then pour in the pineapple. Blend, then add flour sifted with soda, mixing well. Blend in the nuts. Pour into a greased and floured 9" x 13" pan. Bake at 350 degrees for 35 minutes. (Recipe also makes 36 cupcakes which bake at 350 degrees for 20 minutes.)

Blend frosting ingredients and spread on cooled cake. This makes almost a 1/2" of frosting on top and sides of cake, so if your family doesn't "go for" frosting, a 3 ounce package of cream cheese, halving the other ingredients, would make enough for the top of the cake.
