PICKLED OKRA 
2 1/2 to 3 lb. fresh okra
1 qt. water
1 pt. white vinegar
1/2 c. salt

In each pint jar:

1 tsp. dill weed
1 clove fresh garlic
Dash of red pepper
Dash of celery seed

Wash and trim only tender pods, do NOT remove the cap off the okra. Blanche in boiling water for 1 minute, pack into clean hot pint jars, then add spices. Boil water, vinegar and salt and pour over the okra in jars. Seal and hot water bath for 15 minutes. Let stand 3 weeks before serving.
