SURPRISE CAKE 
2 1/4 c. flour
1 tsp. baking powder
2/3 c. shortening
1 1/4 tsp. vanilla
1/2 c. cocoa
1/2 c. chopped and drained sauerkraut
1 tsp. baking soda
1 1/2 c. sugar
3 eggs
Dash salt
1 c. water

Sift together flour, baking soda, and baking powder. Set aside. Cream sugar and shortening, add eggs, mix well, then add vanilla, salt and cocoa, mix well. Then add alternately flour mixture and water. Add sauerkraut. Bake in a greased and floured pan for 45 minutes at 375 degrees. Will make an 9 x 13 inch pan or 2 x 8 x 8 inch square pan. Frost with your favorite frosting. No one will ever guess what your secret ingredients is and I have won many blue ribbons with this cake.
