EASY CHOCOLATE MOUSSE 
1 tsp. sugar
1 c. semi-sweet chipits
5 tbsp. boiling water
4 egg yolks
4 egg whites
2 tbsp. rum or brandy or Triple Sec or Tia Maria

GARNISH:

Toasted almonds, pecans, coconut, whipped cream, candied fruit, anything yummy.

1. Put the chipits and sugar in the blender and blend on high speed for 6 seconds.

2. Scrape down the sides, add boiling water and blend on high for another 10 seconds.

3. Add egg yolks and liqueur and blend 3 seconds more or until smooth.

4. Beat egg whites until stiff but not dry and fold into chocolate mixture.

5. Spoon into serving dishes or glasses. Chill at least one hour and garnish before serving. Served 2-4.
